A selection of hand-picked Chardonnay fruit was whole bunch pressed, lightly settled and fermented in old French barriques. The base wine was matured on lees in barrel for 4 months to develop texture from yeast autolysis prior to tirage. After racking the base wine to tank it was cold stabilised then sweetened in preparation for the tirage yeast culture. The base wine was bottled with a healthy yeast population and secondary fermentation in bottle (traditional method) was kept slow and steady in the cool room.
Following 5 years on lees disgorging was carried out in July 2021 with the liqueur incorporating the Spring Vale 2009 and 2017 Estate Chardonnays. Total production in this vintage of the Spring Vale Family Selection Blanc de Blanc was 1227 bottles.
