Winemaking Notes:

 

A 62/38 blend of Shiraz and Pinot Meunier. Each variety was picked separately in the cool of the early morning and immediately pressed off skins. The juice was allowed to settle overnight then racked off solids. The clear juice was inoculated with a cultured yeast and fermented cool in tank for 7 days before being transferred to seasoned French oak barriques to finish fermentation. The wine was left in barrel and stirred every 2 weeks for added mouthfeel and complexity.

pH 3.42

TA 6.6g/L

Alcohol 13.0%

Harvest dates: Pinot Meunier 25th March. Shiraz 19th and April 2018

 

Tasting Notes:

 

Has beautiful salmon hues with an intriguing bouquet of wild strawberry, rose petal and blood orange. On the palate bright red fruits to the fore, complimented by creamy vanilla bean through the mid palate. Lingering dry, savoury finish with hints of white pepper.

Perfect accompaniment with Tasmanian blue lipped mussels cooked in a tomato sauce.
