The Spring Vale 2018 Rosé, a 60/40 blend of Pinot Meunier and Shiraz, has beautiful sunset hues with an intriguing bouquet of guava, roasted peach and subtle vanilla. An immediate hit of red fruits on the palate, enriched with subtle spice of white pepper and pink peppercorns for a prolonged savoury finish.
Shiraz vines were planted at Spring Vale in 2014 along with additional plantings of Pinot Meunier to supplement the “Salute” Sparkling. In 2018 we decided that the mid palate characteristics of the Pinot Meunier would complement the savoury characters from the Shiraz fruit in a Rosé blend.
The fruit from each variety was picked separately and destemmed into 500kg bins to soak on skins for 1hrs. Gentle pressing and juice clarification using floatation followed by fermentation in aged french barriques for the Shiraz and stainless steel for the Meunier. After fermenting close to dryness the wine was stabilised, filtered and bottled.
